Happy National S’mores Day!

I’ve had lots of delicious s’mores over the years, but I’ve grown a bit tired of the old graham cracker situation. When I started brainstorming new twists on the old classic, my mind went straight to my new pasta maker.

Nutella Ravioli S’mores – Pasta Dough Recipe

Ingredients
  • 2 cups flour
  • 3/4 cup sugar
  • 2 eggs
  • 1 stick butter, softened
  • 1/8 teaspoon salt
  • 1/2 teaspoon active yeast
  • Nutella
  • Vegetable oil, for pan frying
Instructions
  1. Sieve together flour and sugar, and place on a cold, clean surface.
  2. Make a well in the middle and break the eggs into it.
  3. Beat the yolks and whites together with a fork, gradually mixing in the butter, salt, and yeast.
  4. Fold the flour into the egg mixture, form a heavy dough.
  5. Set the ball of dough aside, covered with a cloth, for an hour to rest in a cool place.

1.   Make your sweet pasta dough using the recipe above and these pictures for guidance.

2.   Cut off pieces of dough, and roll them through the pasta machine on the lowest setting (#1).

P.S. This is the pasta machine I use!

3.   Drop a dollop of Nutella onto the center of a pasta dough strip.

Use fingers or a pastry brushed dipped in water to moisten the dough around the Nutella. This will help the pieces stick together in the next step.

4.   Lay a second sheet of pasta dough over the first one. Using the back of a small round cookie cutter or other round object, gently press down around the Nutella to crimp the two layers of dough together. Don’t press hard enough to break through the dough.

5.   Use a larger cookie cutter to separate the ravioli from the rest of the dough. Use a spatula to slide the ravioli onto a plate for safekeeping until you’re ready to use it.

You can re-roll the dough scraps to make more!

6.   Add a few drops of vegetable oil to a skillet on medium heat. When it’s sizzling, use your spatula to slide a couple ravioli into the pan. Let them brown lightly on the bottom for a minute or two, and then flip them to cook the other side evenly.

7.   Here comes the fun, outdoorsy part. Which, in my case, happens to be a balcony…

Use a grill or bonfire or what-have-you to roast a marshmallow.

8.   Sandwich the roasted marshmallow between two ravioli. Squish it all together, and then dig in!
