Cheesy Bean Dip With Spinach Recipe

Cheesy Bean Dip With Spinach and Toast Points

Ingredients
  • 1/2 cup Parmigiano-Reggiano cheese
  • 1 cup fresh baby spinach
  • 2 cups great northern beans
  • 2 tbsp extra virgin olive oil
  • 1-2 cloves of garlic, pressed or minced
  • 1/2 cup goat cheese with cream cheese and spinach
  • 4 tbsp extra virgin olive oil
  • 1/2 tbsp chili powder
  • 1/2 tbsp Old Bay seasoning
  • 1/4 tbsp ground cumin
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
Instructions
  1. In a food processor, combine the Parmigiano-Reggiano, baby spinach, and great northern beans.
  2. Pulse until the mixture is smooth.
  3. Add garlic, goat cheese with cream cheese and spinach mixture, and two tablespoons of the extra virgin olive oil.
  4. Pulse until the ingredients are thoroughly combined.
  5. Add the chili powder, old bay seasoning, cumin, remaining extra virgin olive oil, sea salt, and pepper.
  6. Pulse until the mixture is smooth.
  7. Taste, and add more sea salt and freshly ground black peppercorns as needed.
  8. Refrigerate, covered, until ready to serve. Serve with toasted bread points or crackers.
