Hey guys! Ana from Carmela POP here, and today I’m sharing with you one of my all time favorite recipes: vegan chocolate cupcakes with strawberry frosting (aka, the perfect recipe for spring)!

What I love about this recipe is how delicious and easy to make it is.

Seriously guys, you can even make it if this is your first time in the world baking cupcakes, and everyone is still going to be super impressed with your baking abilities.

I also love the fact that the vegan chocolate cupcakes happen to be vegan. And I say happen to be vegan because you really don’t miss the eggs, butter, or milk in this recipe. To be completely honest with you, you actually don’t even realize they were missing in the first place. No, not even with the frosting.

Being able to pull out a cupcake when you feel like it, no waiting time involved (ok maybe like 30 seconds for it to thaw, but you get the idea)!

These vegan chocolate cupcakes are moist, fluffy packed with flavor, and topped with cloud-like strawberry frosting, that’s pink. But naturally pink, no artificial food colorings, just natural strawberry pink. Please tell me I’m not the only one dancing a bit for the fact that natural food coloring (aka just berries) looks this cute.

Making the vegan frosting is also super easy. I’ve tried it with both traditional butter and with vegan Earth Balance, and both work equally well. I also recommend chilling your vegan frosting for 10 minutes before piping it. In my experience, vegan frostings are more delicate, and the cooling down helps to make them easier to work with.

This vegan chocolate cupcake recipe is given the ultimate finishing touch with fruity, fluffy strawberry vegan frosting.
  • For the Chocolate Cupcakes:
  • 1 cup almond milk
  • 3/4 cup sugar
  • 1/3 cup oil
  • 1 cup flour
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • For the Frosting
  • 1/3 cup Earth Balance Baking Stick
  • 1/3 cup strawberry preserve
  • 2 cups confectioners sugar
  1. For the Chocolate Cupcakes:
  2. Preheat the oven to 350 degrees Line a cupcakes pan with 12 cupcake liners.
  3. In a bowl mix the almond milk, sugar, oil, baking powder and vanilla.
  4. Add the cocoa powder.
  5. In 2 incorporation and the flour and keep mixing until everything is well incorporated.
  6. Divide the batter between the cupcake liners, take to the oven and bake for 15/20 minutes or until done.
  7. Take out of the pan and let them cool until they are no longer hot to the touch
  8. Decorate with the frosting, serve and enjoy
  9. For the Frosting:
  10. In a bowl mix the baking stick and the strawberry preserve.
  11. Add the confectioners sugar and keep mixing until light and fluffy.
  12. Enjoy
